Debbie Shaw's Power Breakfast in a Jar!
I make these overnight oats a lot. They’re portable and satisfying. A little jar of goodness they pack a powerful punch of slow release energy from the oats, omega fats from the seeds to feed the brain, antioxidants from the fruit and probiotic gut goodness from the yoghurt.
1 x300ml jar
5 heaped tablespoons oats (not jumbo)
150mls cold water
60g fresh raspberries or other berries
2 generous teaspoons maple syrup or honey
1 teaspoon linseeds
1 teaspoon chia seeds
Or 2 teaspoons ground seeds
2 -3 tablespoons probiotic natural yoghurt
Few fresh blueberries or other fresh fruit (sliced strawberries, diced kiwi etc.) for the top
The night before breakfast, put the oats in the jar, add the cold water and stir. Next add the fresh raspberries and maple syrup and use a fork to mash the raspberries into the oats, against the side of the jar. Add the seeds and stir,top with the natural yoghurt and fresh berries. Put the lid on and refrigerate overnight. Eat for breakfast or anytime. Pop in your bag for work!
Energy boosters: add 1 teaspoon of spirulina powder or maca powder to the oats
Gluten free option: use gluten free oats
Dairy-free option: use coconut yoghurt
