Fresh Coriander Pesto


Serve with curries, dahls,Indian or Middle-Eastern dishes.


Makes 1 jar

o  1 large bunch fresh coriander sprigs with short stems to yield 2 cups of coriander or use 1cup of coriander and 1 cup parsley, large stems removed)

o  1 scallion, white and green parts, coarsely chopped

o  1 garlic clove,coarsely chopped

o  1 tablespoon (1American tablespoon + 1 teaspoon) cashew nuts, finely chopped

o  1 1/2 teaspoon fresh lemon or lime juice

o  50ml (2fl oz/1/4cup) light olive oil

o  salt

o  cayenne pepper


Put the coriander, scallion,garlic, cashew nuts, lemon juice and olive oil in the blender. Add salt and a little pinch of cayenne pepper, purée until smooth. Taste and correct the seasoning. Store in a covered jar in the fridge covered with a thin layer of olive oil.
