Jen's Gooey Chocolate Chip Cookies
These cookies are delicious and a quick and easy treat.
120g butter, melted
90g soft brown sugar
50g caster sugar
1 teaspoon of vanilla extract
210g plain flour
1 level teaspoon of bread soda
150g chocolate chips
Melt your butter. Add the two types of sugar and mix well.
Mix in the egg and the vanilla extract well. Fold in the flour, and sieve in the bread soda. Mix well, it should be a stiff dough at this stage. Mix through the chocolate chips.
Cover and refrigerate for about 2 hours.
Preheat your oven to 160°C. Line 2 baking trays with baking paper.
Using an ice cream scoop, take scoops of the dough onto the trays, well spaced apart.
Bake for 13 mins and leave to cool on the tray. If you can wait that long!
Add in some extra chips as they cool.
